The grapes are carefully selected, first in the field and then on a vibrating sorting table. They are de stemmed, but not crushed, before being gently transferred to French oak casks from Grenier. In the first days, the grapes are kept at a controlled temperature, aided by coolers and dry ice to promote cryomaceration, a process where the cold helps
